Scrambled Tofu with Vegetables and Rice

Ingredients

Scramble Tofu

Remove 1 block of extra firm tofu and pat dry. Wrap in a clean kitchen towel and twist to release liquid. Place in a bowl and crumble. It should fall apart easily.

Tofu Seasoning

  • ½ Tbs. soy sauce
  • ½ Tbs. sesame oil
  • ½ teas. Salt
  • 1Tbs  peanut sauce (or any stir-fry sauce you like)
  • 1 Tbs. nutritional yeast
    (Different but really nice with a cheesy, nutty flavor. You can find it in health food stores or Publix. Can leave out and use something like sesame salt, or other dry seasonings, but don’t add extra salt if you do.)
  • 1 teas. sesame seeds
  • 1 Tbs. sunflower seeds
  • 11/ Tbs. pumpkin seeds

Seasoning Guide

  • Basic – sesame oil and soy sauce, salt
  • Nuttiness – bangkok peanut sauce, tahini sesame paste, peanut butter powder, peanut butter,  or nutritional yeast (Optional)
  • Herbs – Cilantro, Thai basil, chili

You want to keep down on liquid and only add at the end so the vegetables don’t get soggy.

Cook Tofu

  1. Heat wok or nonstick pan or seasoned cast iron.
  2. Add oil and heat until a crumb of the tofu sizzles.
  3. Add tofu.
  4. Heat on med-high, not turning until it starts to brown. 2-3 minutes.
  5. Then flip over, breaking up a bit again and leaving space for water to escape if needed. 2-3 minutes.

Vegetables

Vegetables (at least three, four is ideal) – colorful peppers, some kind of onion or scallions, carrots, some kind of brassica (broccoli, cabbage, cauliflower), summer squash, chopped greens (kale, swiss chard, Asian greens.), mushrooms (dried and reconstituted is good). Don’t use wet vegetables such as tomatoes. If using summer squash or eggplant, salt first for 15 min. And squeeze water out.

  1. Cook onions, peppers, carrots, mushrooms 1st.
  2. Cook summer squash, brassicas 2nd.
  3. Throw greens in last.
  4. Cook vegetables until just softened a little with some chewiness.

Vegetable Seasoning Added at End

Mix together and add to vegetables:

  • ½ Tbs. soy sauce
  • 1 Tbs. peanut sauce or other stir fry sauce
  • 1 teas. sesame oil
  • 1 teas. salt
