With kids going back to school, this brings a lot of excitement but can also be a hectic time for our schedules. It can be easy to lose track of time or become overwhelmed with after-school activities. But one thing you do not have to worry about, with the help of your EFNEP educator, is providing quick and nutritious snacks for your young ones. The Expanded Food and Nutrition Education Program (EFNEP for short) provides countless recipes that are not only simple to make but easy on your wallet as well.
One of our most popular recipes is our Sundae Funday, which only consists of 3 ingredients.- 1 blueberry muffin
- 1 non-fat vanilla yogurt
- Fruit for topping
Cut your muffin in half, place each half on a plate, and top with yogurt and fruit. It doesn’t get easier than that.
Make sure to check out the Expanded Food and Nutrition Education Program website for more quick and easy snack ideas. If you would like to learn about planning your weekday meals, cooking nutritious meals on a limited schedule and budget, and other food safety tips, make sure to reach out to your EFNEP educator, Judith Garcia, to find out how you can participate in this program.
